Slimming World Banana Loaf/ Cake

I've searched high and low for a Slimming world recipe for a banana loaf. I searched the Internet, books, and the last call was mothergoose (she has got all the slimming world books) OK so here it is.

Moist banana loaf

This dreamy moist banana loaf is best eaten warm, served with vanilla ice cream for the kids for a special treat or for you very low fat yogurt or fromage frais... if desired.

Preparation time 15 minutes
Cooking time 35 - 40 minutes

  • 2/3 ripe bananas
  • 60g/ 2oz All Bran, Roughly crushed
  • 4 tbsp artificial sweetener
  • 60ml/ 2fl oz Apple juice
  • 60g/ 2oz  self-raising flour
  • 5-6 drops Vanilla essence
  • 2 level tsp baking powder
  • 1/2 tsp ground allspice
  • 3 eggs, lightly beaten
  • Salt
  1. Preheat the over to 200°C / Gas mark 6. Line a small non-stick loaf tin with non stick baking parchment.
  2. Using a fork roughly mash the bananas and place in a mixing bowl. Add the All Bran, sweetener and apple juice. Stir to mix well and then sift in the flour. Add the vanilla essence, baking powder and the allspice and then stir in the beaten eggs and season with a pinch salt. Mix until smooth and well blended.
  3. Pour the mixture into the prepared loaf tin and back for 35-40 minutes or until firm to touch and golden brown. Remove from the oven and let cool in the tin for 10 minutes.
  4. Remove from the tin, and peel off the baking parchment. Cut in to slices and serve immediately, accompanied with a dollop of very low fat yogurt or fromage frais if desired
This loaf can be kept fresh for up to three days in an air tight container.

Please tell me what you thought of it. I did turned my nose up when i seen All Bran going in it, but it was very tasty with a cup of tea. I hope it comes in handy when u have bananas going out of date.
I did make this for the mums at mum and tots as they are all following slimming world eating plan.

Welcome

Welcome to my new blog. I had a few weeks from not doing it. So it's gone under a new makeover, with a new background and layout. I had a few comments on where I could correct and improve it. The ladies didn't want to see it like a facebook status update. So its now my online diary! So there maybe some personal stuff on here but sometimes I just need to get things off my chest and this will be the place to do it.
    I have also just published Crafty Pickle facebook page too. If people want me to make a hat I will but I wont be one of these that go out to promote it as a business. 'liking' pages for the sake of it, i cant be bothered with it. I don't have enough time in the day as it is.
   Iv applied for 2 job!!! Its a huge step for me, as i felt the Army to be a full time mum. As my son is 2 years old he is at that age where he wants to be with other children, so he is now in pre-school for 1 day a week. He loves it.  
    Iv been meaning to make cheese and onion muffins so I'm going to make them with pickle now.

Crocheted Flowers
