Moist banana loaf
This dreamy moist banana loaf is best eaten warm, served with vanilla ice cream for the kids for a special treat or for you very low fat yogurt or fromage frais... if desired.

- 2/3 ripe bananas
- 60g/ 2oz All Bran, Roughly crushed
- 4 tbsp artificial sweetener
- 60ml/ 2fl oz Apple juice
- 60g/ 2oz self-raising flour
- 5-6 drops Vanilla essence
- 2 level tsp baking powder
- 1/2 tsp ground allspice
- 3 eggs, lightly beaten
- Salt
- Preheat the over to 200°C / Gas mark 6. Line a small non-stick loaf tin with non stick baking parchment.
- Using a fork roughly mash the bananas and place in a mixing bowl. Add the All Bran, sweetener and apple juice. Stir to mix well and then sift in the flour. Add the vanilla essence, baking powder and the allspice and then stir in the beaten eggs and season with a pinch salt. Mix until smooth and well blended.
- Pour the mixture into the prepared loaf tin and back for 35-40 minutes or until firm to touch and golden brown. Remove from the oven and let cool in the tin for 10 minutes.
- Remove from the tin, and peel off the baking parchment. Cut in to slices and serve immediately, accompanied with a dollop of very low fat yogurt or fromage frais if desired
Please tell me what you thought of it. I did turned my nose up when i seen All Bran going in it, but it was very tasty with a cup of tea. I hope it comes in handy when u have bananas going out of date.
I did make this for the mums at mum and tots as they are all following slimming world eating plan.
